Range of Honey Flavours
At Island Beehive we have the following range of honey flavours:
Spring flowering, Mallee Eucalyptus, which are incredibly tough, multi-stemmed trees that produce a medium dark, full flavoured honey.
Stringy Bark (E. baxteri)
Summer flowering flowering tree that is distinguished by it's rough,fibrous bark that produces a dark honey with a slightly smoky flavour.
Sugar Gum (E. cladocalyx)
Summer flowering tall tree that is home to Brushtailed Possums, Parrots, and the endangered Glossy Black Cockatoo producing a sweet extra light honey. This honey is best used as a table honey but is also ideal to highlight flavours in food.
Spring flowering native plants in the American River region that produces a distinctive bold flavour that some years varies with the seasonal conditions.
Cup Gum (E. cosmophylla)
Winter flowering small, rugged tree with large leaves, large cream flowers and beautiful pink timber that produces a light delicate honey which has a hint of caramel.
